The Steely Dad Half a M.I. Sandwich

A few weeks ago the venerable Steely Dad was kind enough to share one of his gourmet creations, the Steely Dad M.I. Sandwich. A formidable combination of flavor, taste and cardiac halting cholesterol, I was eager to try making one for myself.

Regrettably, the foundation for his breakfast delight is one of my newest adversaries – the bagel. Consumption of the evil bagel these days is akin to kryptonite for my blood sugar. Long gone are the times when we could take a trip down to Brueggers and enjoy a honey wheat bagel with a schmear of chive and onion cream cheese.

Still, I was undeterred in my desire to taste the sandwich that met Steely Dad’s exacting standards. I set out upon a mighty quest to replicate the Steely Dad M.I. Sandwich in way that would not send me straight into a diabetic coma.

Therefore, it is with great pleasure that I present to you, the Steely Dad Half a M.I. Sandwich (this will make two):

  1. Cut four strips of center cut bacon in half and microwave until crispy (about 3 1/2 minutes). Real bacon is important here, not one of its unholy impostors. The Smithfield brand of center cut bacon is my personal preference.
  2. Toast two Arnolds sandwich thins until lightly toasted.
  3. Schmear one tablespoon of whipped chive and onion cream cheese on all four slices of the sandwich thins while still warm from the toaster.
  4. Pan fry four eggs in one tablespoon of Smart Balance butter/olive oil spread until they reach your personal preference for temperature. I’m a bit odd in this vain in that I break my yolks and cook them about 80% of the way through.
  5. Place the strips of bacon on top of the cream cheese on one side of the sandwich thin and the then the eggs on top of that.
  6. Complete by adding the other side of the cream cheese coated sandwich thin.

So, there you have it, the Steely Dad Half a M.I. Sandwich. I served it up with a big glass of ice cold strawberry nesquik infused 1% milk and a smile.

And, after purposely reducing the fat and carbohydrate count by more than half, we don’t need any stinking waivers.

    I hate Nesquick but that sandwich looks absolutely awesome! Must give it a try. I have to agree, anytime anything calls for bacon it must be the real thing. Very nice indeed.

    Who is this Steely Dad character anyhow? He sounds like some Julia Childs wannabe. Seriously, dude, I am truly flattered. And to be honest, your version sounds amazing! I love my yokes runny. Also, in Steely Wife's version, she likes to add green onion to her NONFAT abomination of cream cheese. But I have to tell you, if you haven't tried the Kirkland bacon…DON'T. You will eat it everyday all day long. It's sick! Thanks again, bro, this is awesome. I'm going to re-tweet it tomorrow!

    Hey, I had to try it. The original sounds much better, but I've got to be good. Fortunately, I don't have a Costco membership (Kirkland is Costco, right?) otherwise I would be tempted to try it. Actually, I've decided to try my hand at making my own bacon. I made an investment in an electric smoker a few years ago and haven't done much with it. I'm also planning to cold smoke some sausage when my supplies get here in a few days. That will be a fun post to write.

    Yes, Kirkland is Costco. Basically, I'm addicted to the place. You're lucky you don't have one nearby otherwise you would spend all your money there. Definitely let me know about the homemade bacon. I read an article a while back in Men's Health of all places that explained how to make your own bacon. It didn't sound too difficult.
